The Muscovy Duck was Worth The Trip

Last weekend saw a produce drive that unwittingly ended up with a Muscovy Duck. Read all about it HERE.

This morning, I went down stairs to be confronted with stage one of the cooking process, I document it in THIS post.

This afternoon, my S.O. launched onto the second stage of the cooking process.

The flavour base was maple syrup, which is giving it the colour here, as it has been painted onto the skin.

It was then placed on the barbecue rotisserie, with a shielding foil tray for two hours of fat spitting cooking, watched avidly by our cats.

was right - Muscovy Ducks make excellent roasters! The end result was amazing - look at the colour! It sliced beautifully, and was both moist and flavoursome!

It fed two people, two cats, and a lunch serve for one, all for a bargain $15! Now I need to see if I can find my way back to the place I got it! If you are up for a duck when I do go, let me know!

What kind of farm was it? I assume it wasn't high volume or intensively farmed, or am I incorrect?

Semi-rural, make for themselves mostly. No more than 50 ducks.

My God, that looks delicious! I love duck. The colour of both the skin and the meat is beautiful! :)
