Ahead of the Bellbird Dining + Bar official launch on Saturday, I caught up with Head Chef Federico Rekowski and his sous chef Steven Pham, at Eat Your Heart Out Liverpool. Taking over the well-equipped Bigge Park in the centre of Liverpool, this Liverpool City Council event combined food trucks and large inflatables with live music and a host of children’s activities.
Not possessing a food truck, I located team Bellbird sweltering away in a white tent. Despite their decorative herbs drooping in the heat, the food offerings they were putting out looked fantastic. Even when they’re sweating away in a portable kitchen, Rekowski and Pham manage to stick to the Bellbird restaurant philosophy, which privileges local suppliers, seasonable ingredients, affordable prices and accessible dishes.
At this event that meant a Trio of Sliders ($10) that included beef with chilli jam, cured salmon with tomato salsa, and my favourite – a roasted field mushroom with chalky goats cheese, all supplemented with vibrant greens.
Even more eyecatching were their Pork Belly Tacos ($10/2) taking slabs of roast pork belly and sandwiching them inside soft taco with pickled cabbage and coriander. They're drizzled with a nicely piquant wasabi aioli, then scattered with fried onions for some crunch.
With a stack of Portuguese-style Custard Tarts ($3/each) catching my eye, it was impossible to resist adding one of these crisp, flaky pastries to my order.
They’re thankfully menu stalwarts over at Casula Powerhouse, along with the ever-popular chocolate and walnut brownies.
