Ah a long weekend calls for a leisurely breakfast, and what better day for the so-called damned to flaunt their disregard for concepts of damnation by eating meat than Good Friday? We went for grilled white asparagus spears, mushrooms and shallots on a bed of German cured ham on toasted English muffins, topped with poached bantam eggs (courtesy of Madellen) with a drizzle of truffle oil and some freshly grated Parmesan cheese. The white spears are crunchier, chewier and sweeter than green ones, and were quite a delight.
