This is our version of 'posh' fish finger sandwiches... made with my favourite easy-eating fish - Red Spot Whiting. We bought our fish at the Blackhead Beach farmer and bric-a-brac market by the beach, and it was superb!
The sauce is a fresh horseradish creme fraiche which gave the dish a little zing! The lettuce is a nutty delight called Mache or Lamb's Ear Lettuce. It's a basic salad with a Dutch Maasdam Cheese addition, and a light mirin based dressing.
We stole the idea from Bangbang Cafe and it was great! It was particularly nice to make a comforting childhood dish into something that your adult palate appreciates. Too often nostalgia ain't what it used to be!
