It smelt like heaven as it was baking, drenching the house in warm coconut smells. And it looked pretty darn good too:
You can see the curls of coconut in the crust, and also in the sliced bread... I can't wait to toast some for breakfast tomorrow!
And for pinkandsparkly (and any others who are obsessed with their bread machines) here is the recipe:
1 cup unsweetened coconut milk (not cream of coconut)
1 egg yolk
1 1/2 tablespoons vegetable oil (I used Peanut Oil)
1 1/2 teaspoons coconut extract
1 teaspoon vanilla essence
3 cups plain white flour
1 cup coconut (I used shaved coconut)
2 1/2 tablespoons sugar
3/4 teaspoon salt
1 1/2 teaspoons bread machine yeast
1 teaspoon bread improver
1. Add ingredients in the usual order, as specified by your breadmaker.
2. Bake on the SWEET bread setting (on mine, 3hr 20min), I chose a Medium Crust.
3. This makes a 750g loaf.
Next time I would add even more coconut, perhaps substituting one cup of flour for a cup of dessicated coconut.
