“All I ever wanted to do was open a fucking rock n roll burger joint,” says Tony Gosden.
And so he did. BondiTony’s is living and breathing rock'n'roll, from the signed band posters and artwork on the walls to the effortlessly cool staff. In just seven months, this Bondi local has created a diner that feels like it’s been here forever; probably because, as he says himself, there’s "heart and soul in the burgers".
Lucky they stand up to the big talk, the Trippin' Zeahorse ($14.90) (they’re all named after Aussie bands he’s managed or toured) is a massive grass-fed beef burger, literally oozing with tasty cheese, crispy free range bacon and dripping in relish and house-made seeded mustard aioli.
Just a Jezabel ($14.90) is a little easier on the lips but certainly isn’t lacking any flavour. The crispy free range chicken is marinated overnight in honey soy and ginger, and comes with ‘rock slaw’, guacamole, and sun dried tomato infused mayo.
Apart from music his other love appears to be sauce. “I only buy from people I know,” he says. He must have a lot of mates because the range of hot sauces, mustards and mayos go for miles. Go nuts with your Fries ($6.50) or Sweet Potato Fries ($8.50) - I felt like a kid in a candy store.
Wash it all down with the rock'n 'oll beer of choice, Young Henrys - Natural Lager and Newtowner are both $8.50 on tap. Even though it feels like you’re eating backstage at a music festival, Tony’s no-bullshit attitude will make you feel right at home. Rock on.
