Biber Diner has been a Merrylands institution for a decade, though the current owners have only been operating it for about three years. It’s the place to go late into the night when you’re craving a halal snack pack, available as a Chicken Snack Pack Combo ($15) with a drink, made using their beautiful breast-meat kebab.

We visit on a Taste Food Tours eating adventure for their Turkish pizza. Their popularity means they also do Italian style pizzas - but when you're in a Turkish venue, logic dictates it's Turkish pizza you should be eating!

The dough is hand-stretched while you wait, and topped - if you order Kiymali ($18/family size) - with a mix of seasoned lamb mince, tomatoes, parsley and onions. It’s cooked for less than ten minutes in an oven that sits at around 340 degrees Celsius (well above the three minutes in an autoclave at 121 degrees Celsius that’s recommended to kill all contaminants).

The resulting lahmajun (meat with dough) is light, soft and fragrant. A generous squeeze of lemon is all it needs to be a perfectly satisfying, mouth-pleasing meal.

The same seasoned mince is also served up inside a pide. While the dining experience here is definitely no-frills – this is a kebab shop with a small amount of seating – the pizza I tried was so good, I’ve earmarked the Traditional Iskender ($14) drizzled with mint and black pepper oil on serving, for a return visit.
